Artichoke casserole

4 c artichoke hearts, canned or jar (marinated)2 c shredded or grated parmesan cheese1 c olive oil2 c Italian style bread crumbs
Preheat oven to 350 degrees. Pour artichoke hearts into a rectangular casserole dish with 1/2 of the olive oil and 1/2 of the parmesan cheese. Mix well until the consistency is just right. The consistency will get thicker after adding the bread crumbs. Add 1 c of Italian bread crumbs and mix some more. It will get rather thick. To balance out the thickness, add the rest of the olive oil and add more bread crumbs until you have used up all 2 cups and stir well. The consistency should come out thick, but still creamy from the olive oil. I found that 2 c of the bread crumbs and 1 cup olive oil brought it out to a nice consistency. Sprinkle remainder of parmesan cheese on top and put in oven for 25-30 min. or until cheese is golden brown.
