Veggie Chili

Ingredients
Saute onions in oil for about 5minutes. Add garlic and mushrooms. Cook for about 5 more minutes. Add zucchini ( I suggest dicing rather than slicing). Cook a few more minutes. Add both cans of tomatoes (these are large cans), chickpeas, and veggie crumbles. Season to taste. I like it spicy, so you may want to add less and taste. You can also add salt at this time, but I find I don't need any. Cook for about 15 more minutes.
Directions
Makes 4 good sized bowls. I like it with a little avocado and sour cream on top.
