Mixed Fruit (nearly) Sugar-Free Trifle

1 pkg Jell-o Instant Sugar Free, Fat Free Pudding - Cheesecake1 pkg Jell-o Instant Sugar Free, Fat Free Pudding - Chocolate Fudge1 (8oz) pkg Neufchatel cheese1.5 Tbsp Agave Nectar1 large banana, sliced4 nectarines, peeled, pitted, cut into chunks1 lb strawberries, hulled, quartered1 tsp sugar (mixed into strawberries)1 (14oz) can pineapple chunks in unsweeted juice, drained1 sugar free angel food cake1 cup Cool Whip Lite
Slice angel food cake into 1/2"-3/4" cubes. Set aside.
In 2 separate bowls, prepare each pudding according to directions (2 cups of non-fat milk per mix). Whip neufchatel cheese with agave nectar. Stip into Cheesecake pudding. Refrigerate puddings until you assemble the trifle.
In a trifle bowl, layer as follows:
1. cake
2. cheesecake pudding
3. bananas
4. pineapple
5. chocolate pudding
6. cake
7. nectarines
8. cheesecake pudding
9. strawberries
10. cake
11. chocolate pudding
12. cool whip
Top with sliced almonds, if desired (not included in nutritional analysis)
Serves 10
(Each serving was basically one (large kitchen) spoon dug to the bottom. It looked like about 1 cup, give or take.)

Good ideas with your recipe. My husband makes trifle several times a year and it is always the hit of the party. He uses fat/sugar free vanilla pudding only. No cream cheese. Strawberries, blueberries, kiwi, banana. So, similar to yours but his may reduce the sugar and calorie content a bit. - 8/9/09
