Ingredients
.5 c oil1 c sugar2 egg1.5c flour.5 tsp salt.5 tsp baking soda.5tsp baking powder.5 tsp cinnamon1 c pumpkin
Directions
Mix all ingredients. Place in greased muffin tin. Make 9 regular sized muffins. Bake for 20-25 minutes at 350.

    Very hardy. Made changes using applesauce instead of oil, egg beaters, whole wheat flour, sweet n low and puree carrot instead of pumpkin - 3/1/09

    Very moist, a bit too sweet, great inspite of a few substitutions: I used 1/3 of whole wheat flour (other 2/3 cake and pastry flour), plus sprinkled on some ground flax and some wheat germ. I used my own raw pumpking (frozen) which I blended together with eggs and apple sauce (instead of oil) - 10/2/08
