Apple-Carrot Bran Muffins

Ingredients
1 1/4 cup flour2 tsp baking powder1/4 tsp salt2 tbsp sugar1 1/2 cup bran flake cereal1 1/4 cup skim milk1 egg2 tbsp canola oil1 large carrot, grated1 medium apple, grated1 tsp cinnamon
Directions
Preheat oven to 400°. Combine bran flakes, milk and egg in bowl and allow to soften. Grate carrot and apple into the bran flakes while they are softening. Add dry ingredients and oil. Mix well. Spoon into Pam sprayed muffin tins. Bake 400° for 18-20 minutes. Makes 16 muffins.
