Ingredients: Zucchini, 3 cup, shredded Egg, fresh, 3 large sightly mixedSoybean Oil, .5 cup Buttermilk, lowfat, .5 cup Cocoa, dry powder, unsweetened, .5 cup Granulated Sugar, 2 cupsVanilla Extract, 1 tsp Gently stir mixture till smoothIn separate bowl sift together:Flour, white, 3 cupsBaking Powder, 1 tsp Baking Soda, 1 tsp Salt, 1 tsp Combine flour mixture into wet ingerdientsDo not over mix!!!(add 1/2 cup nuts or chocolate chips if desired)
Spoon Batter into flour and greased bread pans
Sprinkle batter with sugar
Bake at 350 degrees for 45 to 55 minutes
Bread is done when knife comes out clean.
Makes 2 loaves.
