Lemon Garlic Scallop Salad

Ingredients
100 grams fresh or frozen scallops1 tbsp. light margarine1 clove garlic1 1/2 cups lettuce, shredded1 Italian tomato, sliced or 1/4 cup chopped1 tbsp. lemon juice1 tbsp. grated Parmesan cheese
Directions
Melt the margarine in a pan on medium high. Add garlic and scallops. Saute until scallops are cooked through. On a plate, arrange lettuce and tomatoes. Place sauted scallops on top and drizzle with lemon juice. Sprinkle with Parmesan cheese. Serve immediately. Makes 1 serving.
