Almond Rice

Ingredients
2 teaspoons olive oil1/2 cup slivered almonds1 tablespoon almond liqueur2 cups rice, cooked1/4 cup green onions, minced
Directions
1. Heat oil in skillet; add almonds and saute just until golden.

2. Add liqueur and rice to skillet. Stir until heated. Add onions; stir to mix well.

Makes 4 (1/2 cup) servings

    Made this like most others subbing brown rice for white and almond extract for liqueur, but may sub sesame oil for olive next time as well. Served with grilled shrimp it was delicious. - 5/3/12

    Now that someone tried this with brown rice I will definitely give this a try tonite, in fact. I don't have white rice in the house since we started out lifestyle change with my weight problems & dh's diabetes & hi cholesterol. This sounds like a great way to liven up brown rice.
