Lo Carb Zucchini Pancakes

3 large Egg, fresh, whole, raw 4 tbsp Canola Oil 3 tbsp chopped Onions, raw 1 tbsp Parsley 3 cup, sliced Zucchini 1 serving Bob's Red Mill Almond Flour - per 1/4 Cup
Combine Shredded Zucchini with all ingedients except sour cream and Oil. batter should be fairly thin. If a bit too thick just let set for a few minutes and moiisture will wick out of zucchini.
Heat skillet to medium high heat, add tablespoon of oil.
Spoon in 1/4 cup batter, quickly spread very thin.
Fry until light brown, turn once, drain on paper towels.
Spread Tablespoon of sour cream (or applesauce) and fold to serve. Garnish with fresh Parsley
