Cantaloupe Sorbet

5 cups cubed cantaloupe1 3/4 cups cold water1 cup Splenda cup-for cup2 tsp grated orange peel1 tsp orange extract or 1 Tbl Triple Sec
Bring water to a boil and stir in Splenda and orange peel. Remove from heat and let cool.
Puree cantaloupe with water, 1/2 at a time. Stir in orange extract or Triple sec, stick in freezer for an hour.
Stir mixture well and scrape into an ice cream freezer. Freeze until soft serve consistency, about 20 mintues, remove paddle and cover for 10 minutes. Scrape into a covered container and freeze until ready to serve.
Scoop with an ice cream scoop and garnish with mint leaves.
