Spicy Lemon Grass Chicken

Ingredients
1 lb. Chicken Breasts, cut into bite sized pieces2 Tbs. Cornstarch2 Tsp. Salt1 Tbs. Vegetable Oil2 Tbs. Chopped Lemon Grass1 Tbs. Soy Sauce1/2 Tbs. Fish Sauce1/2 Tbs. Sugar1 Tsp. Chili Flakes1 Tsp. Chopped Garlic2 Dried Chili Peppers, optional1/2 Red Onion, Medium Diced16-20 Cilantro Leaves1/4 Cup Coconut Juice
Directions
1. Sprinkle chicken with cornstarch and salt.
2. Combine lemon grass, soy sauce, fish sauce, sugar, chili flakes, chopped garlic, and dried chili peppers in a small bowl and mix together.
3. Heat oil in a large saute pan or wok and saute chicken over medium high heat until chicken is lightly browned.
4. Add in the lemon grass mixture and cook while stirring for about a minute.
5. Stir in onion, cilantro and coconut juice and cook for another minute until onion is just softened. Serve and enjoy!

    When these chicken bits fry up they remind me of scallops. I'll be using this frying method again. Thanks for the insperation. I did the recipe as is. It is very salty but I will _definitely_ be making this again with a few changes. I'll be ommiting the 2t salt & reducing the soy sauce to 1t. - 4/27/09
