Italian Veggie Skillet

Ingredients
2 very large potatoes1 yellow onion (medium)1 zucchini1 stalk celery1 tbls minced garlic1 tbls sweet basil1 teaspoon of rosemary1 1/2 cups baby carrots4 tbls olive oil
Directions
Pour oil in a large iron skillet. Add garlic, onion celery and carrots. Stir to coat with oil. Add basil and rosemary and a bit of salt and pepper. Cook for about 10 minutes on medium high heat. Cut the potatoes into large chunks and add to other veggies. Cut zuccini into thick pieces and add that as well. Stir together and place a top on the skillet and reduce heat to low and cook for another 30 minutes. Stoves vary so cooking times may vary. When potatoes are tender it is ready to enjoy. Serves 8 3/4 cup portions.
