Chicken Enchiladas

Ingredients
1 lb. boneless skinless chicken breast.5 tbsp. olive oil1 can black beans (15.5 oz.)1 cup 2% milk shredded mexican four cheese blend1 large can green chile enchilada sauce (28 oz.)10 corn tortillas
Directions
Preheat oven to 375

Cut up chicken breast and cook in olive oil on medium high heat until no longer pink in the center

(I shred the chicken with a food processor but you can do it however you want to or leave it in small chunks)

Spray a 9x13 pan with Pam, pour 1/2 cup enchilada sauce to lightly cover bottom of pan

Mix chicken with 1 cup of enchilada sauce, can of beans and 1/2 cup cheese, set aside

Heat tortillas a few at a time in the microwave according to package directions

Spoon chicken mixture in to one tortilla, roll up and place in pan - continue until you have used all tortillas

Use remaining enchilada sauce to cover tortillas and sprinkle with remaining cheese

Cover, bake for 20 minutes at 375.

    This is a keeper, and I'm not one who even orders Enchiladas out. I thought I'd make it for my husband. We both loved them, he could not believe that it was diet food. But he did say that it was worth making again. This will be added to our Healthy eating plan. Great way to eat your beans! - 8/20/08

    Totally AWESOME!! Made it for lunch, family really loved it too. I have been looking for a low calorie without giving up taste, this is it. Instead of using canned sauce, I made Granny's Enchilada sauce instead for even fewer calories. I also added my own salsa and onions. Variations are endless! - 8/16/08
