Zesty Chicken Skillet

1 Tbsp Canola Oil3 Skinless boneless chicken breast halves cut into strips Apprx 4 oz. each2 Green Bell Peppers (chopped)2 Medium brown onions (chopped)2 Cups Water1 1/2 Cups Salsa, Thick'n Chunky2 Cups Minute Brown Rice (uncooked)
Heat oil in large skillet on medium-high heat. Add chicken; cover. Cook about 6 minutes on each side to ensure doneness.
Add Green Peppers and Onions, sautee until peppers and onion are tender.
Remove Chicken, onions and peppers from skillet. Set aside.
Add Water and Salsa to skillet, mix well. Bring to boil.
Stir in rice. Reduce heat to low, cover, simmer for approx. 10 minutes until most of the liquid is absorbed. Add the chicken mixture and stir.
This makes about 8 one cup servings.
