Zucchini Carrot Protein Muffins!

-Egg substitute, liquid (Egg Beaters), 2 cup -Instant, Quick, and Regular Oats Cereal, 1 cup, dry, yields - Vanilla Extract, 1 tsp - Biopure Whey Protein, 2 serving - Naturade Soy Protein Booster (1/3 cup), 2 serving NOTE: *Any protein powders would do just fine*- Cottage Cheese, Nonfat, .5 cup (not packed) - Baking Powder, 2 tsp - Cinnamon, ground, 3 tsp - Carrots, raw, .5 cup, grated - Zucchini, 1 cup, mashed - Pumpkin Pie spice, 1 tsp - DaVinci Gourmet - Sugar Free Syrup (Hazelnut), 1 oz - Splenda, .5 cup
Blend together all ingredients except carrot and zucchini.
Once well blended, fold in veggies and scoop onto muffin pan.
Bake at 350 degrees for 15 minutes or until knife comes out clean.
