Grilled Corn Salad

Ingredients
2 ears fresh corn1 sweet bell pepper1/2 to 1 cup red onion2 tsp. olive oil2 tsp. balsamic vinegar1/2 tsp. dried oregano
Directions
Grill corn until beginning to brown. About five minutes. Remove kernels.

Grill onions until soft. About three minutes. Chop

Grill peppers until skins are charred. About five minutes. Allow to cool, then peel and slice.

Mix all ingredients in bowl and chill.

    I used the broiler for the corn (wrapped in foil) and charred the peppers and onions in broiler as well. Everything came out perfect. This recipe was wonderful. - 10/16/08
