Fish Soup with Vegetables and Herbs

Ingredients
1 tb Olive Oil12 oz mild white fish filet, cut in large dice1 Green Pepper, chopped 2 Carrots, sliced2 Medium Potatoes, diced1 cup Clam broth3 cups Vegetable brothPinch Saffron1 tsp thyme1 tb Parsley, chopped Salt and pepper to taste
Directions
Heat olive oil and saute onion until translucent. Add green pepper, carrots, and potatoes and stir over medium heat until coated with oil. Add saffron, thyme, and both broths and simmer 15 minutes, until carrots and potatoes are tender. Add fish and cook 5-10 minutes, until opaque.

Makes about 3 2-cup servings.
