Introduction

Ingredients

    2 cans high quality canned tuna in olive oil, mostly drained, then flaked
    1/2 cup olive oil mayo
    3 tbsp whole grain dijon mustard
    juice of 1 lemon
    1 tbsp fresh tarragon, minced
    1/2 pound red potatoes, quartered if large
    2 cups green beans
    2 oz kalamata olives, pitted and diced
    2 large hard boiled eggs, quartered
    6 cups arugula

Directions

In a medium stock pot, bring 4 quarts of salted water to a boil. Boil potatoes until tender, about 12-15 minutes. In the last three minutes, throw in the green beans. Drain and rinse with cold water.

In a medium bowl, stir together mayo, mustard, tarragon, lemon juice, and olives. Stir in potatoes, green beans, and tuna. Serve mixture on a plate of arugula and dressed with 1/2 hard boiled egg.
