Rice- Flour Pancakes

1 cup brown rice flour1 tsp baking soda1 tsp cream of tartar1 tsp maple sugar or date sugar1/4 tsp salt3/4 cup cooked brown rice1 cup soy milk or water2 tbsp vegetable oil
oil and preheat skillet or griddle. In large bowl combine rice flour, baking soda, cream of tartar, maple or date sugar, and salt. Stir in the rice and toss to coat.
In a 2 cup glass measure, combine the milk or water and oil. Pour into the flour mixture and mix until combined, taking care to not over mix.
Spoon onto the griddle or skillet. Cook until the tops are bubbly and edges are brown. Turn and cook until light brown. Serve at once.
