Creamy Zucchini Salad Dressing

1 zucchini, chopped1/4 cup water1/4 cup olive or canola oil1/2 tsp unbuffered vitamin C crystals1 small garlic clove (optional)1/4 tsp salt2 tbsp dried basil1 tbsp dried marjoram1 tbsp dried oregano1 1/2 tsp dried rosemary1 1/2 tsp dried savory1 1/2 tsp dried thyme1 tsp dried sagefew dashes of hot pepper sauce
In a blender, combine the zucchini, water, oil, vitamin c, garlic, salt, seasonings, and hot pepper sauce. Process 2 minutes or until smooth. Adjust vitamin c to taste.
Cook's Tips -
For a green salad dressing, do not peel the zucchini: for a cream-colored dressing peel it.
Increase vitamin C for more tang.
Best when used within 3 days.
