Orzo Pasta Salad

Ingredients
2 C orzo pasta (dry)1 C red pepper1 C red onion1 6 oz can black olives.25 C olive oil.25 C lemon juice1 C feta cheese
Directions
Bring water to boil in a large sauce pot. Add orzo and cook until crisp tender. Drain and add cold water and ice to set pasta. I large bowl add chopped onions, peppers, olives. Mix olive oil and lemon juice in. Add pasta and cheese. Keeps well in refrigerator and tastes better the longer it sits. Makes 16 servings, 163 calories and 7 grams fat. Can use low fat feta for a lower fat salad.
