Fagioli Soup

Ingredients
1 lb ground chicken 1 medium onion chopped1 medium zucchini chopped3 stalks celery sliced20 mushrooms slicedhandful baby carrots sliced2 cans diced tomatos (no salt added)2 tbsp oregano2 tbsp basil3 cloves garlic minced1 can chickpeas or navy beans8 cups chicken broth (low sodium)
Directions
brown the ground chicken in stock pot. drain any excess fat. Add onions,zucchini, celery, mushrooms, & carrots saute for 5-10 minutes. Add tomatoes, spices, garlic, & chicken broth. Bring to rolling boil. Reduce heat to low and add chickpeas/navy beans. Cook on low/simmer for additional 15-20 minutes or until all vegetables are softened.
