Fried Green Tomatoes w/ Rice

1 lg green tomato3 tbs bread crumbs, seasoned1 lg red onion11/2 c brown rice (prepared)1 tbs canola oil or canola oil spray2 tbs Egg Beaters1/2 tsp onion powder1/2 tsp garlic Powder
Combine the seasoned bread crumbs, onion powder and garlic powder. Slice your green tomato 1/8 -3/16 " thick. Brush one side of a slice of tomato with egg sustitute. Take a tsp and lightly dust that side with bread crumb mixture. Spray frying pan with Canola oil spray or canola oil and place over medium heat. Fry just until breading is toasted. Then carefully turn over. Again fry until toasted. Remove and evenly distribute over 2 plates of 1/2 c of prepared brown rice. Respray pan and saute red onions until just translucent. Distribute onions over tomatoes.
