Very Blueberry Pancakes

2 large egg white, lightly beaten1/2 cup skim milk1 cup AP flour1 tsp baking soda1/2 tsp vanilla extract1/4 tsp salt1 cup blueberries3 tbsp waterCooking spray
Whisk the egg white, milk, flour, baking soda, vanilla, and salt in a small mixing bowl. Stir in 3 water until completely incorporated. Gently stir in the blueberries and let stand for 5 minutes.
Preheat a nonstick skillet over medium-high heat. Spray cooking spray on the skillet and pour 1/4 cup of batter per pancake onto the skillet. Cook about 2 minutes. Flip each pancake and cook another 2 minutes.
Serve immediately!
