Egg Dish Casserole (Oxygen Magazine)

Ingredients
9 egg whites1/2 t pepper1/2 t salt16 oz fresh spinach1/2 c diced onion1 1/2 c diced cauliflower1/4 c diced mushrooms1 t evoo8 oz 1% no salt added cottage cheese8 oz Greek yogurt4 oz grated sharp reduced fat cheddar cheese
Directions
1. Preheat oven to 350 degrees
2. Coat glass 8x8 dish with cooking spray. Pour egg whites and pepper. In microwave-safe bowl, nuke spinach 4 min. Saute onion, cauliflower and mushrooms in nonstick pan with oil. Season with salt and pepper. Add to egg whites. Add cottage cheese, yogurt and cheddar. Stir until combined.
3. Bake 45 min or until top slightly bubbling.
