Apple Bran Muffins

Ingredients
2 CUPS Whole Wheat Flour1 CUP Water2 TSP. Baking Powder1/2 TSP. Cinnamon2 CUPS Bran Flakes1 CUPS 1% Milk2 Medium Sized Apples, Chopped1/2 CUP Egg Beaters6 TBSP. Applesauce (or Pearsauce)1/4 TSP. Cinnamon2 TSP. Splenda, no calorie sweetner
Directions
Preheat oven at 350 degrees (f). Use a no-calorie cooking spray to grease a muffin pan. Sit off to side.

Mix the chopped apples and bran flakes in a bowl with 1/4 TSP of Cinnamon. Mash the mixture until the bran flakes are broken into smaller pieces. Add milk, water, Egg Beaters, applesauce, baking powder, and flour. Only stir until all items are well mixed - like all muffin recipes, you want the mixture to be slightly lumpy. Poor 1/4 CUP of mixture into each muffin cup. Mix the Splenda and remaining 1/4 TSP. of Cinnamon together and sprinkle across the top of the muffin mixture. Bake for 20 - 25 minutes.

    This recipe is soooo easy and delicious. A couple of things to watch out for. There is baking powder listed in the ingredients but forgot to put in intructions. In instructions it calls for water, but does not say how much. I didn't add any water, but I remembered the baking powder. YUMMY! - 8/16/08
