Cream of Tomato and Tofu Soup

1 Tbs. olive oil1 Tbs chopped dry onions1 can of petite shopped tomatoesI block of firm tofu2 cans of tomato soupsmall amounts of salt and pepper to taste
Put olive oil and dry onions in 2 1/2 qt saucepan. Simmer over medium- medium low heat, until onions start to soften. Add can of tomatoes and heat thoroughly.
Blend tofu with cans of soup (NO water) in a blender. Add the onion/tomato mixture to blender. blend well. Put mixture back into saucepan and heat. DO NOT boil soup.
