Pumpkin Apple Muffins

Ingredients
2 c. whole wheat flour1 c. solid pack canned pumpkin1 c. chopped apple1/4 c. apple sauce1/3 c. honey1/3 c. sugar2 tbsp maple syrup3 tsp baking powder1 c. raisins3/4 c. walnuts1 egg1/4 c. egg substitute
Directions
Combine pumpkin, egg and egg substitute, sugar, honey, maple syrup, apple sauce, apples, raisins and walnuts until combined. Sift together flour, baking powder and 1/2 tsp salt. Mix wet and dry ingredients until just combined. Distribute into greased or papered muffin tin. Bake at 350 for 25-30 minutes.

* To make this recipe completely vegan, substitute 2/3 c. agave syrup for honey and sugar and substitute either 1/2 c. mashed banana or vegan egg replacement for egg beaters and egg.
