Broilled Zucchini-Parmesan Sandwich

Ingredients
2 Cups diced fresh zucchini1/2 Cup minced onion1 clove crushed garlic1/2 tsp. basil1/2 tsp. oregano2 Tbls. Olive Oilsalt, pepperfresh tomato slices1/2 Cup freshly-grated Parmesan
Directions
Saute' onion and garlic, with salt, basil and oregano, in olive oil until onion is translucent. Add zucchini and saute' until soft.

Spread onto toasted bread, topped with thin slices of tomato and a sprinkling of fresh parmesan. This should be broiled, not grilled. Parmesan loves to broil.
