Crab Queseadillas

Ingredients
1 C. shredded reduced-fat Cheddar Cheese2 oz. reduced-fat Cream Cheese1/2 medium red bell pepper, finely chopped1/3 C. fresh Cilantro2 Tbsp. banana peppers (optional)1 tsp. orange zest, grated1 Tbsp. orange juice8 oz. crab meat, shredded and drained4-6 whole wheat tortilla shells (8' diam.)2 tsp. olive oil (or no oil, if cooking in a paninni grill)
Directions
1. Combine Cheddar, cream cheese, bell pepper, cilantro, jalapenos (if using), orange zest and juice in a medium bowl. Gently stir in crab. Lay tortillas out on a work surface. Spread one-sixth of the filling on half of each tortilla. Fold tortillas in half, pressing gently to flatten.

2. Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Place 2 quesadillas in the pan and cook, turning once, until golden on both sides, 3 to 4 minutes total. Transfer to a cutting board and tent with foil to keep warm. Repeat with the remaining 1 teaspoon oil and quesadillas. Cut each quesadilla into wedges.

3. Makes 4-6 servings. (depending on how much you put into each tortilla)

    This was very good and quick to make! I added crushed red pepper and I used imitation crab. I served it with salsa but i think guacamole would be better. - 9/15/08
