Coconut Chicken & Pineapple Skewers

Ingredients
5-6 boneless, skinless chicken breasts3-4 cloves garlic2 shallots3 1/2 tsp. cuminJuice of 2 limes1 can coconut milk1 cup cilantro4 tbsp. olive oil4 tbsp. fresh ginger2 tsp. salt1 whole pineapple
Directions
Presoak bamboo skewers in water. Liquefy all ingredients except for chicken and pineapple in a blender. Cut the chicken into cubes, marinate in liquid mixture for about 4 hours. Cut pineapple into cubes. Alternate threading of chicken and pineapple onto soaked skewers, using about 4 pieces of each per skewer. Barbeque for about 5 minutes on each side. Makes about 6 servings of 3 skewers each.
