Shepherd's Salad - Coban Salatasi

* Red Ripe Tomatoes, 4 large whole (3" dia), chopped * Cucumber (peeled), 1 large (8-1/4" long), chopped * Green Peppers (bell peppers), 1 cup, chopped * Lemon Juice, .75 lemon yields (adjust to taste) * Salt, 3 dash * Olive Oil, 2 tbsp * Onions, raw, 1 large, chopped * Feta Cheese, .25 cup, crumbled * Parsley, 1 cup, rough chopped
Makes 4 servings:
Rough chop the tomatoes, peppers, onion*, parsley, and cucumbers. Toss them with the olive oil*, salt, and lemon juice (adding more lemon juice if you prefer). Serve with crumbled feta on top.
* In my opinion, red onions and extra virgin olive oil work best with this dish!
