8 oz cooked boneless skinless chicken breast, cut into bite sized pieces8 oz (dry) pasta, cooked al dente3/4 cup onions, chopped3/4 cup peppers, chopped3/4 cup mushrooms, sliced1 large scallion or 2 cloves garlic, minced1 large tomato, chopped1 cup fat free cottage cheese1/2 cup fat free sour cream1 cup fat free milk1/2 cup salsa1 TBS capers1TBS olives, sliced5-6 basil leaves, mincedabout 2 tsp coarse black pepper1 cup shredded fat free mozzarella cheese
Combine all ingredients except mozzarella in a large bowl and toss to mix thoroughly. Spray a large, lidded casserole dish with cooking spray and add pasta mixture. Bake, covered, in 375 degree oven for about 40 minutes until thoroughly heated and bubbly. Sprinkle mozzarella over the top of the casserole and return to oven, uncovered, for an additional 5-10 minutes or until cheese has melted.
You can vary this dish with different meats and veggies. It can also be served cold as a pasta salad or as a soup by adding water or stock.
