Summer Quinoa

Ingredients
1/3 cup dry Quinoa and 2/3 cup water1 cup chopped Broccoli1 cup chopped Spinach.5 cup chopped Onion1 chopped medium tomato1 clove garlic.5 tsp evoosalt and pepper to taste
Directions
cook quinoa per instructions (like rice)
saute onions and minced garlic in oil
once quinoa is done cooking (all water absorbed)
add broccoli, spinach tomato and onion/garlic saute. Cover with lid and put over medium heat so juice from tomato can steam broccoli and spinach.
Makes approx : 4 1 cup servings.

    This was very yummy, I didn't make it exactly the way it said. I had spinach and collards on the side and then ended up mixing them up after all, but it was still yummy! - 9/15/08
