Butterfly Life Chicken Dijon

Ingredients
2 tablespoons unsalted butter4 3 ounce chicken breasts, no skin2 cups mushrooms, sliced1 small onion, chopped2/3 cups chicken broth (low sodium)1 teaspoon cornstarch1 tablespoon Dijon mustard
Directions
In a large skillet, melt butter and saute' chicken, turning frequently until browned and thoroughly cooked. Remove chicken to a serving dish. Add mushrooms and onion to the skillet and saute' 3 minutes. In a small bowl, whisk chicken broth and cornstarch until smooth. Whisk in mustard. Add to mushroom mixture, stirring constantly. Simmer for 1 minute. Pour over chicken.
