Zucchini Chili

Ingredients
2 cups Zucchini sliced1 can lima beans1 can pinto beans1 onion (med)2-3 cloves of garlic5 turkey pepperoni sticks3/4 can colassal size black olives1/2 cup sliced mushrooms1/2 can V8 juice1 tbsp beef stock concentrate or 1 cubeshredded cheese for toping
Directions
Fry onion and garlic in small amount of extra virgin olive oil (1 tbsp). until onion is translucent. Add turkey pepperoni sticks sliced in small rounds. Add zucchini and mushroom and cover for 2-3 minutes. Add olives, lima beans and 1/2 of the pinto beans. Mash or puree the other 1/2 of the pinto beans. Add V8, beef stock and pinto beans and stir until it is well mixed. Add other spices to your taste (chile, paprika, etc) but no salt because there's enough already in the ingredients!

Serve with grated cheese on top.
