Ingredients
* Limes, 1 fruit, sliced * Garlic, 2 cloves, sliced * Shallots, 2 tbsp sliced * Rosemary, fresh 2 tbsp * Thyme, fresh, 2 tbsp * Salt, 1 tsp * Pepper, black, 1 tsp * Rainbow Trout , 2 -4oz fillets
Directions
Preheat oven to 400 degrees.
Slice thinnly shallots, garlic, and lime.
Pick rosemary and thyme leaves from stems.
On a piece of foil large enough to encase both fillets, arragne in layers the garlic, shallots and limes.
Season the fillets with salt, pepper, rosemary and thyme.
Seal the foil, and place in the oven for 15-20 minutes. Fish is done when flaky.

    This trout was yummy. Easy to make. Did not require too many dishes and my kitchen is not a mess. I will definately make it again. - 7/23/09
