Everyday Beef Fried Rice

2 tbsp olive oil or vegetable oil14 oz. lean thinly sliced beef, diced into approx. 1/4 inch size pieces1 cup chopped onion1 cup finely chopped celery1 cup julienned carrots3 tbsp lite soy sauce3 eggs scrambled6 cups room temp or refrigerated cooked brown rice
Makes six 1 1/2 cup servings
On medium high heat, in a large soup pot, add 2 tbsp olive oil. Saute beef and onion until onion is clear and beef is no longer pink. Add carrots and celery. Cook until done. Add 3 tbsp lite soy sauce and stir together til well mixed. Now toss in 6 cups rice and stir just until rice is heated through. Stir in scrambled egg. Serve and enjoy.
