OPEN FACE TUNA MELT

Ingredients
1 Can solid white albacore tuna packed in water (drained)1 Tbsp. chopped red onion1Tbsp. chopped walnuts1Tbsp. chopped raisins2 Tbsp. light ranch dressing1/4 tsp. dill paste2 rye fiber crackers such as Wasa4 Tbsp. shredded reduced fat cheesesplash of lemon juicesalt and pepper to taste, if desired
Directions
Mix together tuna, ranch dressing, dill paste, and lemon juice. Add red onion, walnuts, and raisins and mix. Assemble half of the tuna mixture on each cracker and sprinkle 2 Tbsp of cheese on each. Place tuna crackers in microwave for 20 seconds or toaster oven until cheese is slightly melted. Makes 2 open face tuna melt crackers. (hint: red onions can be soaked in water for about 10 minutes to take some of the bite out and leave them with a sweet, mild flavor)
