Fried Crappie

40 fillets of crappie3 eggs1 package of saltine crackersLawrey's Seasoning saltwater
Prep time does not include catching and cleaning fish. The five minute cook time is based off of hot oil and is per batch.
Take and crush crackers and add seasoning salt to your liking. Crack egg in bowl and whip. Add water to get a thinner coating. Take fillets and coat in egg mixture. Then take and coat them with saltine cracker mix. Deep fry until golden brown.
I assumed that 3/4 cup of oil got absorbed into the fish when frying. This number maybe high.
I also assumed that one serving is 2 fillets.
