Chicken Red Beans and Brown Rice

Ingredients
* Uncle Ben's Instant Whole Grain Brown Rice, 4 cup * Chicken Breast, no skin, 2 whole breasts, bone and skin removed (4 skinless halves) * Beans, red kidney, 1.5 cup (1 can) * Beans, pinto, 1.5 cup (1 can) * Stewed Tomatoes, 1 cup (1 small can) * *V8 spicy hot, 6 oz
Directions
I use ready to heat chicken breasts, and instant brown rice, so heating them up only takes 10 minutes. Drain the beans, but not the tomatoes. Cut the chicken into chunks, mix them all together and put into a shallow casserole dish. Bake at 350F to heat everything through, about 30 minutes. Serve with a big salad. Easy and yum. For the folks eating at your house who are not on a diet, a slice of pepper jack cheese melted on top is awesome.
