Mom's Country Meat Loaf

*Canola Oil, 2 tbsp Onions, raw, 1 medium (2-1/2" dia) Celery, raw, 1 stalk, large (11"-12" long) Bread, whole wheat (including toast), 3 slice Ground beef, extra lean, 2 pounds Carrots, raw, 1 large Shredded Salt, 11/2 tsp Pepper, black, 1/4 tspEgg, fresh, 1 large Tomato Sauce, 1 cup Brown Sugar, 1 Tbl unpacked Cider Vinegar, 1 Tbl Yellow Mustard, 1Tbl (remove)
1) In 2 qt sauce pan over medium heat, to the hot salad oil,add the chopped onions and celery.
Cook about 10 min stirring occasionally.
2) Into large bowl, tear bread slices into small pieces; add onions and celery mixture.
3) To the bread and onion mixture add lean ground beef shredded carrot, salt, pepper, egg and half the can of tomatoe sauce. Mix meat mixture thoroughly.
4) In 12"x8" backing dish, with hands shape ground beef mixture into 8"x4" loaf; set aside.
5) In cup add light brown sugar, cider vinegar, prepared mustared to the remaining tomatoe sauce, mixture thoroughly.
6) Spoon sauce over meat loaf . Bake at 350 for 11/2 hours
