Gallo Pinto - Rice & Beans

Ingredients
Chicken Broth, 1 1/2 cupsCanola Oil, 2 tbsp Onions, raw, .25 cup, chopped Garlic, 1 clove mincedBeans, black, 1.75 cupPeppers, sweet, red, raw, sliced, .5 cup Carrots, raw, .5 medium choppedCilantro, dried, 1 tbsp White Rice, long grain, 1 cup
Directions
Add oil to a large pan and saute the rice for 2 minutes over medium heat. Add minced onion, red pepper, garlic, cilantro, and carrots and saute for another 2 minutes. Add chicken broth. Bring to boil, cover and reduce heat to simmer until rice is tender (about 15 minutes). Add beans then stir to mix. Replace cover and let simmer for another 3 minutes.

Press mixture into custard cups then invert onto a small plate or bowl. Top with grated cheddar cheese and serve. Makes 4-6 servings. Calories calculated at 6-1/2 cup servings.
