Cumin Grilled Sea Scallops with Chickpea Salad

Ingredients
For the Scallops:2 lbs large sea scallops1 T. olive oil2 t. ground cumin1 t. kosher saltFor the Chickpea Salad:1/4 c. fresh lemon juice1/4 c. olive oil1 t. ground cumin1 t. kosher salt2 (16oz) cans chickpeas, (rinsed and drained)1 large bell pepper, chopped1 large tomato, seeded and chopped1/4 c. chopped fresh parsley1/4 c. chopped fresh chives
Directions
Heat the grill to high. In a large bowl stir together 1 T. olive oil, 2t. ground cumin, and 1 t. salt. Toss in scallops and gently stir to coat. Grill scallops until golden and cooked through, about 3 minutes per side. Set aside.

In a large bowl toss together all remaining salad ingredients.

Divide Chickpea salad between 6 salad or 4 main coarse plates. Top with scallops and serve.

Makes 6 lunch or 4 dinner size salads.
