Stuffed Green Peppers w/ Ground Turkey

Ingredients
3 Green Peppers, halved1/2 cup chopped onion1 clove garlic1/2lb Ground Turkey 93% lean1 cans stewed tomatos, no salt added1 cup cooked brown rice1/2 cup shredded chedder cheese, 50% light1 tsp chili powderpepper
Directions
-Cook brown rice according to directions on package

-Pre-heat oven to 375

-In a large skillet, sautee ground turkey, onion, and garlic ( use light cooking spray or a dash of olive oil), chili powder and pepper. Remove from heat and add stewed tomatoes and brown rice. Mix thoroughly.

-Halve the green peppers and cook in boiling water for 3-4 minutes until slightly softened. Remove from water and place face down to drain.

-Arrange pepper halves in large baking dish and fill with meat mixture. Sprinkle cheese on top of each half and bake in 375 degree oven for 15 minutes.

    Made this for dinner this evening. It was very easy to prepare. Tastes great. I did substitute fresh tomatoes for the stewed tomatoes as I had a few left from the end of the garden! Made this a second time and added sliced mushrooms. Even Better!! - 9/4/08

    I make stuffed green peppers all the time and thought I would try this healthier version with ground turkey and red peppers for extra Vitamin C. I added a little tomato paste which added exactly what this recipe needed. My hubby and son loved them. Next time I will add a can of corn to the mixtur - 1/13/09

    I made this recipe last night. I didn't read the part about only 1/2 lb of ground turkey and ended up putting in an entire pound which caused me to add extra chili powder, an extra can of tomatoes and to double the brown rice. It was very tasty and fresh. - 12/10/08

    Great recipe. I did use 1/4 lb ground turkey and a 1/4 turkey sausage instead of 1/2 lb ground turkey. I also used yellow sweet peppers to give it more of a sweet taste. Love this recipe - 12/30/07
