Tangy Tuna Wasabi Roll-ups

Ingredients
8 large leaves of Romaine Lettuce1 can tuna, drained (3 oz)3 Tbs onion, minced finely3 Tbs celery, minced4 Tbs grated carrot2 Omega 3 Eggs, hard boiled and chopped1 tsp pickled jalepeno2 Tbs capers, chopped1 Tbs horseradish2 Tbs Mayo made with canola or olive oil1-2 tsp wasabi powder, mixed into paste1 Tbs lemon juice1 Tbs sweet pickle relish1 tsp garlic, finely minced or paste1 Tbs mustard (preferably spicy mustard)1/2 tsp turmeric1/2 tsp celery seed1/2 tsp black pepper1/2 tsp salt (optional)
Directions
Makes 4 1/2 cup servings or two Roll-ups.

Mix the wasabi powder with water and let sit for a few minutes while you mix the rest.

Fully drain the tuna and add onion, celery, carrot, capers, jalepenos and chopped eggs. Stir to combine.
In a bowl, mix the mayo, lemon juice, wasabi paste, horseradish, mustard, pickle relish, and seasoning till well combined. Taste and adjust seasonings to suit you.
Take 1/4 cup of tuna/egg mixture and put into the lower part of the spine of 1 leaf of Romaine lettuce. You can sprinkle with soy sauce if desired. Tuck the top of the leaf over the tuna and then roll the leaf around the tuna, kind of like an egg roll.
Serve with a soy-wasabi dipping sauce and sesame seeds, or plain.
It's fun to let everyone roll their own, however, if you want to serve these, pierce each roll with a toothpick to hold it's shape and serve on a platter.
