whole wheat cous cous (1 and 1/4 cups dry)1 green bell pepper, chopped1 large tomato, chopped1 shallot, chopped1/2 cup parsley, chopped1/2 cup mint, chopped2/3 cup lemon juice1/2 cup water6 tbsp olive oil
Mix 1/2 cup boiling water with 1 1/4 cup cous cous. Add olive oil and 1/3 cup of the lemon juice. Stir well. Cover tightly and let sit for 5 minutes. Fluff cous cous with a fork. Add the diced tomato, diced pepper, and diced shallot. Add mint and parsley. Toss. Add additional lemon juice to taste. Refrigerate for 15 minutes before serving.
