tortilla de patatas

Ingredients
8 eggs2 medium potatoes1/2 medium onion3tbs olive oilsalt, pepper to taste
Directions
slice potatoes and onions into very thin round slices
toss into skillet with olive oil
cook until tender on medium heat
add eggs (beaten beforehand - I use 8 eggs due to size of my skillet, you need enough eggs to cover the potatoes)
cover and cook on low heat until top is not runny 20-30 minutes
flip and brown for 2-5 minutes

great to serve with sour cream in addition to a combo of:
tomatoes, avocado, peas and don't forget the hot sauce!
