Turkey Meatloafs in muffin tins

Lean ground turkey (1 1/2 pounds)Bread crumbs 3/4 cupEggMilk 1 tsp Worcestershire sauce 1/2 small onion1 carrot, peeled and shreaded1 small can of Tomato paste3/4 Catsup2 teaspoons Sugar
Finly dice 1/2 small onion. Peel then grate 1 medium carrot. In a bowl combine Ground Turkey, Bread crumbs, milk, egg, the onion, the carrot, and 1 tbs of tomato paste, 1 tbs of catsup, 1 tsp Worcestershire sauce (optional).
In a small bowl, combine remaining tomato paste, sugar, catsup for the topping.
Spray non-stick cooking spray into 6 large muffin tins. Place meat mixture into the tins and spread topping evenly over all 6. Bake for 25 to 35 minutes in a 350 degree oven until brown and cooked through.

These were a huge hit! Husband really liked it! And he doesn't do meat loaf! He wants to try it with chicken too! I didn't add milk. I also sauteed the onions, carrots, and garlic together b4 putting in mix. I added a dash of red pepper to the meat and to the sauce ontop. Well done! - 3/12/13
