Spicy Cauliflower

1 head Cauliflower1/2 medium onionJuice from 2 limes1 Roma tomato diced1 Jalepeno diced2 Tablespoons finely chopped cilantro1 Tablespoon Bacon Bits (or 2 pieces cooked bacon)1/2 cup Feta cheese crumbles
Break cauliflower into flowerettes and cover with water and a dash of salt. Boil until tender.
While califlower is cooking chop onion and cover with the juice of two limes.
Dice tomatoes and jalepeno and 'roast' in a hot skellet that has been sprayed with PAM. Set aside.
When tender, drain cauliflower. Stir to break into smaller bite size pieces. Add crumbled Feta cheese, bacon bits. Stir. Add tomatoes, jalepenos, onions, and cilantro. Stir and serve.
I like to add the lime juice also, but this depends on your taste. This can be served warm or cold.
